Is this a viable substitute for nutritional supplements?

I am trying to increase my intake of antioxidants. I am wary of taking supplements sold at places like Whole Foods, as they have not undergone much testing for their safety. I do want the health benefits though, so instead of taking supplements, would it work if I just capitalize on foods that are exceptionally rich in certain indgredients, such as:

2 brazil nuts for selenium
3 steamed oysters for zinc
1 oz oz organic veal liver for Vitamin A
1 tbsp turmeric
1 tbsp ground cinnamon
1 tbsp ground cloves

I will be taking vitamin C and B-complex vitamin supplements since these are water soluble.
